One of the easiest ways to take care of yourself during the period of transition from one season to another is to introduce in our diet more foods that strengthen the immune system. Our immune system is particularly sensitive to probiotics, which help us to remove the damage to our intestines. Today I present you two recipes for vegan yogurt, and which you choose depends on how much time you have.

100 g peeled almonds (or other)
600 ml water
1/2 package of live yeast or 100 ml vegan yogurt
1 teaspoon agar-agar or flour of locust bean seeds
Option 2 - fast
100 g cashews (or other)
1 tablespoon of lemon juice
1 probiotic capsule (mine is Laktifort)
1 teaspoon of agar agar or other
To make vegan milk grind the almonds with water in a blender. Strain the resulting liquid to remove any residues which are ground well, you can use gauze, tea filter or a specific strainer. Place the milk in a saucepan over low heat until reach the maximum temperature of 42 °, upon submersion the finger should feel heat but can hold it. Remove from heat and add the agar agar (previously dissolved and heated) and the vegan yogurt or living yeast. Mix well and pour into a glass jar, wrap well in a blanket to keep the heat and leave to stand for at least 15-24 hours.
Option 2 - fast
To make vegan milk blend the cashews with water. Strain the resulting liquid to remove any residues which are not grounded well, you can use gauze tea filter tea or specific strainer. Heat agar agar in 50 ml of milk Pour the milk into the blender jar and turn on low speed, add the lemon juice (to taste) and agar agar then add the probiotic powder. Pour into a glass jar and refrigerate for about 30 minutes to set.
