Tortilla (or Spanish Omelette) has always been one of my favorite dishes, it’s a typical Spanish recipe, probably one of the most famous in our country. We call it “potato omelette” , but this is a vegan version and it’s so delicious, you won’t even notice the difference! We’ve used gram or chickpea flour with cold water instead of eggs, it’s really cheap, simple and easy, and it tastes amazing.

Gradually mix the chickpea flour with cold water,stir well and for a long time until the mixture becomes very runny and with no lumps. Add the oil and a pinch of salt,stir well and let rest for at least 4 hours(or 1 hours with sparkling water), diring which you will see a foam forming that needs to be removed from time to time (every 30 mins). Before baking you can add the vinegar to remove the chickpea smell but it is entirely up to you.
Peel the potatoes and wash them , slice the potatoes in small pieces . Peel and chop the onion into small pieces.
Put the potatoes in a pot of steamed or in a simple pot to boil.
Pour in the potatoes and onion to the mixture. Mix all together.
At this step, you'll have to choose one version:
In the frying pan : Place one or two tablespoons of olive oil in a frying pan and heat on medium heat. Pour in the potato onion mixture and cook over medium heat for about seven minutes. Place a plate over the tortilla and turn it around and cook the other side for about another 5 minutes. Turn the tortilla again if required until it's totally cooked.
In the large tray : Grease a large tray with little oil or use baking paper to line the tray.Pour in the chickpea and patatoes mixture until it reaches a hight 2 cm. Bake in a pre-heated oven at high temperature (200 degrees) for about 15-20 minutes until a nice golden crust forms on the surface.Slice and serve warm dusted with black pepper.
Add black salt and black pepper to get a truly authentic egg-like taste.
