Another soup that you can not say no. If I had to describe it in one adjective I would use the word ‘sweet’. This time I recommend to accompany with the bread. It is a very well-balanced soup: the one you see in the pictures I’ve eaten dinner, and unfortunately as you know you are on a diet.

200 g pumpkin
1 bay leaf
1 liter of vegetable stock
3 tablespoons olive oil
a pinch of salt
1 teaspoon apple cider vinegar
In a large saucepan add onions, stir in the stock, pumpkin, potatoes, and chestnuts, cider and bay leaf; simmer over medium heat until vegetables are tender, about 20-30 minutes. Let cool slightly.
In batches, process mixture in a food processor until smooth (if soup is too thick, gradually add more stock). Season with salt and pepper. Just before serving, stir with olive oil, and garnish with pumpkin seeds or parsley, if desired.
