This is the most delicious salad – fresh and wonderful-tasting. This salad is known and loved around the world. Those of you who’ve been lucky to eat this salad in Greece will know that is made with feta cheese .If you eat feta it’s absolute haven, I make in the vegan way with basil tofu.

3 large plum tomatoes, seeded and coarsely chopped
1 English cucumber, peeled and coarsely chopped
1 medium red onion, cut into thin rings and soaked for 10 minutes in a small bowl of ice water to make it less sharp (facoltative)
1 small green pepper, cut into thin rings
3⁄4 cup kalamata olive
50 gr bio tofu cheese
2 tablespoons olive oil
1 teaspoon red apple vinegar
1 garlic clove, minced (facoltative)
1 teaspoon dried oregano or fresh parsley and dill
Putt the tomatoes in the large salad bowl. Slice the onion and add to tomatoes . Cut the cucumber and the green pepper into thick slices .
Roughly chop the dill and the parsley. Serve with small blocks of feta and kalamata olives, drizzle with olive oil, vinegar and salt.
