A delicious, creamy textured soup without the cream. The secret is in the potatoes ! This soup is an all time favorite in my family. Serve hot with a home made bread, sprinkle with some chopped parsley.
2 large bell peppers(yellow o red), stem, ribs and seeds removed and discarded; flesh diced
3 medium potatoes , diced
1 small onion, whole
1 stalk celery, whole
2 carrots, diced
1 liter of vegetable broth or water
2 tablespoons extra virgin olive oil
2 pinch of salt
2 pinch of pepper
2 pinch of fenugreek
Place the carrots, bell peppers, potato diced, onion and the celery in a heavy large pot . Covered with vegetable broth and bring to a simmer over high heat. Decrease the heat to medium-low. Partially cover and simmer until the potatoes are very tender, stirring occasionally, about 20 minutes. Eliminate the onion and the celery. Add the fenugreek and pepper.
Using an immersion hand blender, puree the soup in the pot until it is smooth. Alternately, working in batches, puree the soup in a regular blender, taking care while blending warm liquids.
Place again into a large pot and simmer for 10 minutes. Season the soup, to taste with salt .
