Crackers with puffed rice are good bread substitutes, are fragrant and tasty. They are one of the easiest baking projects you can take on. Make up a batch to munch on throughout the week, and another for when you plan on having company over for an evening relaxing with a bit of wine . Here is the recipe:

200 g flour
100 ml of water
4 tablespoons extra virgin olive oil (30 ml) or 20 grams of coconut oil
1 pinch of salt
1/2 cup puffed rice/ rice crispies
In a large combine bowl, the water, oil and 1 pinch of salt . Add flour a little at a time, mix the ingredients well. Scrape the dough onto the table and gently knead until thoroughly blended . Pat the dough into a ball, wrap it up in plastic wrap and leave about 15 minutes.
Preheat the oven to 180' C. On parchment paper roll out the dough with rolling pin until 0,3cm thick. Sprinkle with puffed rice, press with a rolling pin and quickly cut the dough into 4 cm squares or stamp out different shapes.
Sprinkle with oil, salt or herbs of your choice. Bake for about 10 minutes, until the crackers are golden brown. Transfer to a rack and let cool before serving or packaging.
