Crackers are good bread substitutes, are fragrant and tasty. They are one of the easiest baking projects you can take on. Make up a batch to munch on throughout the week, and another for when you plan on having company over for an evening relaxing with a bit of wine . Here is the recipe:
Crackers with chickpea and rice flour
- Difficoltà medium
130 g of rice flour
100g chickpea flour
3-4 tablespoons extra virgin olive oil (or 2 of coconut oil)
a pinch of salt
In a large combine bowl, the water, oil and 1 pinch of salt . Add the mix flours a little at a time, mix the ingredients well. Scrape the dough onto the table and gently knead until thoroughly blended . Pat the dough into a ball, wrap it up in plastic wrap and leave about 15 minutes.
Preheat the oven to 180' C(375F). Between 2 parchment paper roll out the dough with rolling pin until 0,3cm thick. Cut the dough into the squares or stamp out different shapes.
Sprinkle with water, salt or herbs of your choice. Bake for about 10 minutes, until the crackers are golden brown. Transfer to a rack and let cool before serving or packaging.
