This couscous recipe is with broccoli, carrots and zucchini, but you can go for any other veggies. Either way, this will only take you a few minutes to make. I love it!
Couscous with broccoli, carrots and zucchini

150g couscous (or follow the instructions)
250 ml of vegetable broth or water
1 clove garlic
2 pinches of pepper
2 pinches of curry
2 pinches of salt
3 tablespoons extra virgin olive oil
In a medium saucepan over high heat, bring stock to a boil. Cook the vegetables for 3 minutes. Add couscous and stir.
Remove from heat, mix well. Add salt, mashed garlic, spices and oil, mix well. Cover and let stand for 5 minutes or until liquid is absorbed. Fluff with a fork and serve warm.
