This couscous recipe is with broccoli and tofu . Either way, this will only take you a few minutes to make. I love it!

250 ml of vegetable broth or water ( follow instructions)
1 clove garlic
2 pinches of pepper
2 pinches of curry
2 pinches of salt
3 tablespoons extra virgin olive oil
100g natural tofu
3 tablespoons soy sauce bio
2 tablespoons lemon juice
1 tablespoon olive oil (optional)
pinch of black pepper
In a medium saucepan over high heat, bring stock to a boil. Cook the broccoli for 3 minutes. Add couscous and stir.
Remove from heat, mix well. Add salt, mashed garlic, spices and oil, mix well. Cover and let stand for 5 minutes or until liquid is absorbed.
Slice the tofu into the small cubes.
Dry the tofu off with paper towels. Leave the cubes for few minutes into the dressing( soy sauce bio, lemon juice, olive oil (optional),pinch of black pepper)
Heat a frying pan over medium heat until hot. Swirl to coat the pan and then add the coated tofu.
Adjust the heat down to and cook undisturbed on one side until you start seeing the edges of the tofu browning (about 2 minutes).
Flip the tofu over and fry until the second side is browned (about another 2 minutes).
Add the tofu to the couscous and fluff with a fork and serve warm.
