A simple yet mouthwatering Beetroot Salad made with carrots, apple, sunflower seeds, and topped off with squeeze of lemon juice. This only takes about 3 seconds to make in the Mix and can be made in advance and stored in the fridge until needed.

the juice of one lemon
3 tablespoons sunflower seeds (fresh or toasted)
1 teaspoon mustard (optional, for children don't put it)
1 teaspoon of maple syrup (optional)
1-2 tablespoons extra virgin olive oil
salt and parsley to taste
Peel the beets, carrots and the apple, then grated one by one the ingredients with a grater with large holes.
Season the salad with the dressing and served.
