This apple upside down cake is one of those eggless cake recipes that i have developed on my own. The secret to this light & soft texture in the cake is due to the addition of lemon juice and water. this cake is made up of ingredients that are easily available in your kitchen and you don’t have to buy anything special to make this cake.

First, peel the apples and cut into thin slices. Put them in a bowl with water and lemon juice.
Sift together the flour, baking powder and cinnamon.
Beat together the oil, maple syrup and water or almond milk. Mix well with a spoon the ingredients. Then, pour the baking soda with lemon and add the flour mixture.
Stir with a spatula to get the ingredients well-mixed.
Pour the batter into an 20 cm round cake pan , oiled and floured , and layer the apple slices. To make the cake easier to unmold, line the pan with parchment paper and then flour.
Bake in a preheated 350-degree oven for 40 minutes or until a toothpick inserted in the center comes out clean.
Cool on a rack for at least 10 minutes.
